Mexican Vege Rice & Nandos Marinated Chicken

This easy to make vege rice recipe is incredibly delicious that my mom could just eat it on its own..

For a bout 4 cups of rice

Ingredients to saute :

1 Green bell pepper cubed
1 Red bell pepper cubed
1 Yellow bell pepper cubed
1 chopped medium-big onion
5-6 jalapenos sliced 
5-6 ripe tomatoes cubed
2 tbs paprika
whole lots of white button mushroom
whole lots of brown crimini mushroom

Second part:
whole lots of carrots
salt and black pepper to taste

Steps:
1.  Saute all the ingredients to saute until the aroma steams up.
2. Pour in your washed rice, give a gentle stir and add 4 cups of water to steam-cook it for about 30 minutes or so.
3. Check on your rice once in while, if the rice is still under cooked and needs more water, make sure you add just a little amount at a time. You dont want your rice to be too soft.
4. Add in the carrots 10 minutes before turning off the fire. You want that crunchiness yet cooked carrots wouldn't you.

Add in salt and pepper to taste. You may also add in other preferred vegetables in this recipe..Im thinking of cubed brinjal..sounds delish but my husband wouldn't like it as much... :)

For the chicken:
I marinated my boneless chicken for about an hour with:
garlic-ginger paste
Nando's Hot ketchup
oil
black pepper corn
basil leaves

Steps:
1.Mix well everything in a big bag making sure every inch of the chicken parts are covered evenly.
2.Marinate for an hour or so.
3.Pop them all into the oven at 250C for 30 mins or until the chicken is cooked.
