Moist and not too sweet Steamed Fruit Cake

My favorite cake of all, the premium Steamed Fruit Cake. It is a tedious and time consuming cake to make, but with that subtle sweet taste and texture with all those incorporated fruit taste, all I can say is....it sure does BAKE-my day!

My version of Steamed Fruit Cake (less sweet)
~ inspired by many great bakers.

Makes about 1.5kg cake

Batter:
315g soften butter - I always use Lescure butter (if not Lurpak) to get that creamy-buttery after taste..nyyummm..
125g fine sugar

300g plain flour
1 tsp baking powder    
300g mixed fruits (raisins and/or any other preferred dried fruits)

4 omega plus eggs
2 tsp vanilla extract

For the caramel:
1 cup fine sugar

Steps:
1. Sieve flour and baking powder in a big bowl. pour in mixed fruits.
2. Cream the butter and sugar in a low-medium speed (1-2) for about 3 mins
3. Fold in the flour mixture and put aside.
4. Lightly beat the eggs in a separate bowl and add into the batter followed by the vanilla extract.
Set aside
Get hold a steamer with boiling water
4. Pour 1 cup of sugar in a saucepan over medium heat.
5. Turn the fire off and remove from heat when the sugar is completely melted and turned dark. Gently add into the cake mixture and mix well.
6.Pour mixture in a cake tin (cover with aluminum foil),steam for about 4 hour or so (First 3 hours on high heat, and on a medium fire for the last hour) . Let it cool before cutting.

Note: the cake will further develop its taste after a day or two...yummy!!
