The easiest kuih to make for a nice afternoon tea. I promise.
Simple ingredients and the simple steps are as follows:
5-6 medium size red potatoes
3 cups of flour
1-2 cups of fine sugar
Steps:
1. Boil peeled red potatoes for about 20 minutes or until the potatoes are soft when pressed with a fork.
2. Drain the water and while its still hot, mash the potatoes
3. Swift in the flour (1 cup at a time) using a wooden spoon
4. You should get a non sticky dough
5. Let it cool.
6. Shape your kuih into a ring (a doughnut like shape) and deep fry until golden brown.
7. Set aside until all the dough is done.
8. In a different wok, with a low medium heat, add in 1 cup of sugar.(depends on how much coating you need for your kuih)
9. Keep stirring the sugar until it starts to bubbles at the edge. If its too thick and hard to stir, add in 1 tablespoon of water.
10. Once the sugar melts (like a gooey texture) , dump in the fried 'doughnuts'. Make sure the doughnuts are coated well with the sugar.
11. Take them out on a plate and set aside to cool. The coatings should crystallized within minutes.
