Not-so Traditional Welsh Cake

Made this for my kid's wild wild west class party.. Its a cross between a cookie. a scone and a pancake.Who would not love it!

Makes about a 10  pieces of 8cm diameter welsh cakes.

Ingredients:
225g plain flour
85g caster sugar
1 tsp baking powder
50g butter, cut into small pieces
50g sultanas
1 egg, beaten
splash of milk

Steps:
1. With the tip of your fingers,mix all ingredients in a bowl except the eggs and milk. It should form into a crumble dough. Add in beaten eggs.

2. Its a little bit dry.Splash in a little milk to form it into a soft ball dough. Add in more flour if your dough sticks on your fingers. It should be the same consistency as shortcrust pastry.

3.Roll out the dough on a lightly floured work surface to the thickness of your little finger or thinner

4.Cut out rounds using a 8cm cutter, re-rolling any trimmings. 

5.Grease a flat griddle pan and place over a medium heat. Cook the Welsh cakes in batches, for about 3 mins each side, until golden brown, crisp and cooked through.

Serve it warm with butter and jam...or simply sprinkled with caster sugar. ...yummyyy!!!!!!

Cakes will stay fresh in a tin for 1 week insyaAllah.
