Apam Tapai Beras

Bismillahirahmanirahim,



Ingredients:
5 cups of rice flour
2 cups of fine sugar
1 cup of fermented rice (tapai)
3 1/2 cups of water
1 packet of ENO -original flavor  ( to be added upon steaming the apam)
Food coloring ( to be added upon steaming the apam)

Steps:

Day 1: Prepare the tapai by mixing these 2 ingredients with some splash of water to activate the yeast. Set for 2 days.
2 cups of rice
1 packet of yeast

Day 3: Blend every ingredients in a food mixer and set it in the fridge over night.

Day 4: Add in ENO and few drops of food coloring and mix well. Batter should be very watery and foamy. Fill 3/4 full into cups and steam for about 30 minutes.

Best eaten with steamed and salted grated coconut. Fluffyummy!!
